Spicy beef stew with sausages, lentils and vegetables

Spicy beef stew, all in one pot yummy!

This evening I decided to just use up a load of stuff in the fridge and freezer and make a lovely warming beef stew with sausages, lentils and vegetables thrown in.  This is the ideal one pot meal that can just be thrown together and left to cook- perfect for a weekday evening after work.  The paprika and tomatoes make it lovely and warming and perfect for the Autumnal weather outside.  The recipe is very approximate but roughly as follows…

Just throw all together straight into a pot serves around 4 people,

  • 300g stewing beef
  • 3 really meaty pork sausages
  • 1 tin tomatoes
  • 1 tin lentils drained and rinsed
  • 200g mushrooms quartered
  • 1 onion roughly chopped
  • 4-6 carrots peeled and roughly chopped
  • 4-6 potatoes roughly chopped
  • a couple of glasses of white wine
  • 1ltr beef stock
  • 2 teaspoons paprika
  • pinch dried thyme
  • salt and pepper

Put all the ingredients into a large lidded saucepan.  Mix together well and then bring to the boil.  Turn heat down to a simmer, put the lid on and then leave to simmer for approximately an hour stirring occasionally.  Take the lid off and leave until the liquid is reduced to a thick sauce.  Then serve into large bowls with some bread thickly spread with butter.
